Dry batter

    I've never been a huge fan of deep fried walleye, I really like my walleye pan fried. I'm looking for a dry batter to try deep frying. Anyone got a good dry batter recipe ?

    Fish crisp Cajun. Not spicy at all like you would assume, just good flavor. I toss fillets or nuggets in a big ziplock dry, no egg wash or beer etc. Then pour in enough powder so when you shake the bag up it covers the fish good.
    Creates a nice light coating on the fish when deep fried. Not a bunch of batter mixed with fish like a beer batter

    Buy some rice flour, season it with whatever your palate likes, dust fillets, and fry in peanut oil - light and good!

    All the above are good ...and if you like the bar style then the beer batter will give you this type. Its like pancake mix..

    I like the crumb types and my fav..is guides choice ..in many flavor. .and it also can be used on lots of other meats. ..fry in desired oil of choice. ..

    I like using Cajun fish crisp and panko mixed about 50/50. Dry fillets or nuggets, egg bath, fried in butter and dusted with Mcormiks spicy pepper medley and seasoning salt. It's not as spicy as it sounds. Mmmm

    image.jpeg image.jpeg Went to go do some fish Tuesday night at home. Only had a small amount of the Louisiana and an equal amount of reg fish crisp. Mixed the 2 together added some flour, cajun seasoning and some corn meal.

    Did it up in the back yard, cast iron, big burner, fresh crappie and some peanut oil were the ticket.

    Fish turned out awesome!!!

    Yeah peanut oil is my fav for frying in (well, actually lard trumps peanut oil, but my arteries complain) - Peanut oil leave such a light taste to the fish as opposed to the heavy taste from Canola oil.

    Wrong thread to look at before lunch !

    Most have squeezed lemon on their fish but I also recommend trying out a lime. Even better on fish tacos

    Forgot I made up a batch of fresh pico de galo as a side instead of tartar sauce.

    Another topping I was introduced to this year was diced red onion in malt vinegar. Just chopped up and left to soak in a jar in the fridge.

    Peanut oil is the only oil to use for frying fish in the ice shack. Or anywhere inside. No smoke and hardly any smell.

    I've got some more if you need. Just got back from Grand Forks and emptied their shelf of the Louisiana beer batter so we still have a bunch of the regular. Wifes going back in a few weeks with her friends so we can load up again.
    I'd give you my last pack if you ever needed. Anyone who brings me back Miller High Life from a fishing trip with their wife I'd walk over glass to help out.

    Crush up a bag of Mrs. Vikky's sea salt and vinegar chips (or portion thereof), and shake up your fish in that. Wicked crunch, and adds a great flavour. Sea salt and pepper, jalapeno, even lime and black pepper all do well.

    Try Idahoan instant mashed potato flakes, season them with whatever you like, dip fillet in egg then into the flakes. They fry up super crispy.

    Lol. I saved a bag you gave me. It's in the boats emergency kit now. If I'm going to die on a rock it'll be with a full belly of deep fried Louisiana fish.

    Pan fried is the only way I do walleye. I shake my filets in a bag of flour with a bit of salt and pepper mixed in, then dip them in an egg wash and coat them well in a pan of crushed salted cracker crumbs mixed with parmesan cheese and into the hot oil. I use a light oil like peanut or becel. Cook until golden brown both sides and I enjoy mine with a nice fresh salad instead of fries. Yummie!!

    In a decent sized bag (ice bag size), 2 cups flour, 2 cups corn flake crumbs, couple tablespoons of garlic powder, couple tablespoons of onion powder, couple tablespoons of seasoning salt, little bit of pepper.... shake to mix....

    In separate bag put walleye fillets in, add about 1/3 bottle of franks red hot sauce, shake bounce stir, whatever you gotta do to get the fillets coated in franks...

    Take fish from one bag and put a few pieces at a time into the breading and shake well to coat, continue until all fish coated...

    Heat oil until it's proper temperature, 350-400f, cook fish until golden brown...

    It's not spicy....
