Cookin' Fish in 2019

    Hi all!

    I'm new to this forum, and noticed that the threads for the recipes are kind of old. So thought I'd kick off a new thread for the year in progress.

    Recently, I'm on a fish n' chips spree, and have been experimenting with different kinds of batter. I've had quite a bit of success with Japanese tempura batter, the stuff you usually use for shrimp. But with sole or halibut, the results are outstanding!

    Anyone with new innovative ways to cook fish n' chips? Always interested in classic, tried and tested recipes, too.

    Since changing eating habits to healthier choices we have been baking our fish 99% of the time. We brush 1 tbsp of olive oil on the bottom of a baking dish then lay the filets in the pan. Brush 1/2 tsp of olive oil atop each filet then sprinkle one of two mixtures atop the filets and bake in the oven with the rack about 6” from the top of the oven and the oven set to broil. Cooking time depends on the thickness of your filet. We check after 8 minutes, once the fish flakes easily it’s done.
    We use two different mixtures depending on what we are in the mood for or the type of fish. In a small bowl I mix 1tbsp seasoned bread crumbs, 1.5tbsps nutritional yeast and 1tsp of either lemon pepper or cajun spice and sprinkle a layer over the filets until fully coated.
    And we always omit the chips.....but then always have. We always found the combination of fried fish and french fries too heavy of a greasy feeling. We usually have a baked potato and fresh cooked broccoli or carrots along with a salad with our fish.

    Funny, my mother always bakes her fish when she's cooking, but I don't recall her every setting the oven to broil. But I can see how that might yield superior results. Thanks so much! I'm definitely going to try that out. But might substitute the baked potato for some yams. After all, we're going for healthy here, right?

    I find broiling it tends to crisp up the topping a bit.

    Picked up some salmon on special yesterday, and planning to cook today, using Frank_NK28's broiling recipe. Will advise of results; wife is quite optimistic!

    I found this recipe on a TV show several years ago and it has been a hit at my household as well as with my fishing buddies. It is baked fish recipe. Place your fillets on a non stick baking sheet or equivalent. Brush your fillets with a layer of mayo and pepper to preference. Next I blend salt and vinegar chips with a huge helping of fresh dill in a food processor until finely ground to bread crumb consistency ( you can also hand crush the chips in a bag and add chopped dill if you don't have a blender). Place a good sized layer of your chip mixture on each mayo brushed fillet. Bake the fish at 410 degrees for 8-10 minutes.

    Once cooked, I plate the fillets on a bed of home made coleslaw (you can buy premixed if you prefer)and then I add asparagus that I grilled on the barbecue. I use a spatula to place the fish on the bed of coleslaw. This is an elegant meal which i think is impressive when presented and tastes great! The combination of fish and coleslaw when taking a bite is what sets this dish apart. Fresh pickeral caught in the morning become my evening dinner using this recipe. IMG_0926[2986].JPG

    Here is a baked walleye recipe I just recently came across I tried it a few times, it is my new fave.
    Dip fillets in egg then toss in Italian seasoned bread crumbs and place in a baking dish, sprinkle some garlic powder and pepper then top with grated Parmesan cheese( not the canned stuff) bake at 450 till cheese is melted and crispy. Cooking at high heat really gets this dish crispy, it is also awesome the next day cold.
