    For those who dare....... first one I have tried and is great even without the sauce! Second is a "new one" to me and hope to catch and try on an upcoming trip to Moak Lodge

    BUFFALO BURBOT BITES....

    -2 medium to large burbot fillets, cut in to nuggets
    -1 cup original Shorelunch
    -1/2 cup milk
    -1/2 cup hot sauce
    -1/2 cup ranch dressing
    -cilantro or green onions
    -canola oil for frying

    Heat canola oil to 375*F in a deep pan. Dip nuggets into milk then dredge in Shorelunch. Fry for three to four minutes or until golden brown. Drain on paper towels. In a large bowl, mix ranch dressing, and hot sauce. Toss in fish and shake to coat well. Top with chopped cilantro or green onions. Makes a great appetizer!

    BACON BURBOT BITES.......

    Ingredients:
    Approximately 2 Burbot (4 backstraps)
    1 lb bacon
    1 cup ketchup
    1 cup brown sugar (packed)
    1 teaspoon Worcestershire sauce
    Optional: A few drops of liquid smoke (we like hickory)

    1) Preheat oven to 350 degrees F (175 degrees C).
    2) Cut fish into cubes or the size you desire.
    3) Wrap thawed bacon around fish pieces. Tip: We cut bacon slices into 1/3 lengths. Ensure you have wrapped the Burbot on all
    sides with your bacon; secure your bacon with a toothpick and place on cookie sheet or 9x13" pan.

    4) In a saucepan, combine ketchup, brown sugar, liquid smoke, and Worcestershire sauce; heat just to boiling. Pour over bites.
    5) Bake in preheated oven until bacon is completely cooked(approximately 45-50 minutes).

    Good Luck! I have been trying for some bigger Burbot so I can make poor man's lobster. 9-10" Burbot are fun to catch but not to eat. LOL

    I keep it simple and IMO and my family's it tastes like scallop.

    Cut the backstraps into cubes, boil in lightly salted water for 7 minutes, remove water and brown with butter and fresh garlic. MMMMM GOOD!

    For the more adventurous the tail meat (similar to the backstraps), belly and even the liver can be eaten.

    Have to agree with you Dave.....I love scallops, and burbot done the way you describe is very similar! As for the belly and the liver...... I "share them" with the ravens and seagulls!

    Had it once at the ice hut. Caught it, cut it in cubes, coated it in tempura batter and deep fried it. Delicious!

    I'm having friends over tonight and will be experimenting with some of the burbot recipes. Yesterday, the guy at the fish market gave me a whole bunch of burbot for $26.02. Not bad.

    In the town of Temagami, Ont the ice hut operators used to gather all the ling they could each winter from their clients and freeze them for a big end of the season fish fry fundraiser they called "The Ling Fling". They sold tickets to the event and the proceeds went towards the Lake Temagami community fisheries program for raising and stocking walleye fry to help restore the walleye fishery in the lake. I don't know if they still do it or not as I left the area 6 years ago but it was started in the early 90's and was still an annual event up until 2013 when I left Ontario. It definitely was a neat idea and the walleye fishing improved ten fold over the years.
