    Looking at trying something different from the typical English style beer batters. Anyone have recommendations? I like spice but the gf dosent

    I just use cheap seasoned bread crumbs, simple and tastes good. Dip in flour, then egg, then bread crumbs.

    The bakers narrows stuff isn’t bad... I make my own so I am biased, not a fan of most of the store bought stuff lol

    Don’t always need batter . this stuff is the shit if you can find. Comes in different containers, gimli fish has most of the time.
    Apply heavily to fish ,Hot pan with small amount of butter and drizzle of oil.
    Flip fish once .
    Even better if you fry an onion first and leave it in pan

    I rarely deep fry fish anymore for diet concerns, but if i do, its a simple homemade coating with a flour/baking powder dredge, eggwash, and seasoned panko - crispy and tasty
    And fried in lard or peanut oil only.
    Second is the tempura batter.

    our latest crave is baked - fillets smothered in butter, lemon zest, dill, and basil - baked in bbq, pit boss, or oven ...... this above is real real good! And healthy.

    A buddy surprised me a couple years ago by using pancake batter mix. very good.

    Also crushed up Mrs. Vicky's salt and vinegar chips work well too (use sparingly)

    Ever since I went to New Orleans a few years ago, I’ve been using Slap Ya Mama fish fry.
    Just need to we the fillets, no need for egg wash. Super light and great flavour.
    Also make my own from time to time… pancake mix, corn meal and some creole seasoning…. Again no egg wash.

    Not a huge fan of the heavy beer batter coatings… unless on bass

    For me
    Breakfast walleye: was my routine almost daily in the nopiming. Went grocery shopping on the lake before the wife got up. Simply pan fried, hint of butter/salt pepper. Just something about the simplicity!

    Supper walleye: usually did a bbq/baked version of what Chris does but with some salsa, cilantro etc etc. This gets you the most flavourful fish, dummy proof and as healthy as it gets as long as you lay off the butter/oils. Which you don’t need either, just make sure you don’t dry off your fillets of water or cook too long or too high of heat (20 min on med). Wrap the tin foil tight. Serve buffet style as the fillets will come apart.

    For breading Spoon, take your pick from 100000 different versions. Best ones and most flavour are usually homemade. I just did a combo smiths camp critter with Cajun fish crisp and it was pretty good. I agree with above though, the heavy batter type is too much, thinner/lighter the better.
    Bass and musky I just eat sushi style.

    My fave is crushed saltine cracker crumbs mixed with parmesan cheese, fresh ground pepper, a bit of garlic powder and a bit of paprika. Flour the filets, dip in an egg wash then roll around in the cracker crumb mix and pan fry in peanut or canola oil. If you like fried fish, and at one time I did this was my go to...

    Chris we are the same as you with the diet concerns. I haven't eaten a piece of fried fish now in three years and the last time I had french fries was when we were fishing with Donovan for cats in July 2019. I ate 3 or 4 of Debs fries at that roadside diner near the dam, can't recall the name? Figured I'd treat myself and after not having eaten anything fried for almost a year at that point I felt like throwing up after three or four fries. Didn't even like the taste any more. It's oven baked or nothing now.

    Slice some white onions
    Butter and olive oil
    Salt and pepper the fish
    Wait till pan gets to right heat - med / high
    Stir onions to cover with butter and oil
    Cook without moving them around to caramelize.
    Remove from pan cover.
    Put fish in ( I like skin side up)
    Cook till crispy on that side
    Flip over and put onions on that side , the rib section will hold the onions better.
    Cook till done.

    Simple and no messy batter and very good for you
