Favorite Jerky recipe ?

    Anyone got a favourite jerky recipe they'd like to share. For whole muscle meat. Not a ground meat jerky gun.
    Will be going in the smoker

    I am interested in reading some responses here. I have a couple caribou hanging in the garage right now that are screaming to be made into jerky.

    Well I have made a recipe a few times since this post. On beef and venison. I haven't exactly measured what I put in but I'll ball park it.
    For 2-3 pounds meat. I put in large ziplock and add
    3/4 - 1 cup brown sugar
    1/4 cup soy sauce
    Crack some pepper to taste
    Shake in some W sauce

    24 hours roughly in the bag mixing it once in a while
    I smoke mine 1-2 hours, then remove the smoke box and continue to cook usually around 150 degrees until I think it's done.
    Simple recipe , the brown sugar really adds flavour with the smoke. Adjust how you like.

    Cure:

    I also add a little bit of cure #1/pink salt.
    Using this calculator I don't add any more salt or sugar. Just the amount of cure. Not sure if cure is necessary for jerky but gives it a bit of a reddish colour in the meat.

    Similar to above, just add commercial teryaki sauce, salt, mix and marinade, then smoke.
    I prefer to use mesquite or hickory - oak is too strong, alder and apple i save for fish.

    Hah...going to be making jerky next week. :) I'll post a recipe when they're finished. Usually try something new everytime.

    Ill share mine. Its nothing fancy but I like it...

    I've started using ground meat rather than cutting the meat into strips. Not because I don't like the strips, but because I find it easier to work with, and I can mix in a bit of pork or beef with the venison.

    First I mix up:
    2 LBS ground meat.
    A bit less than 1/4 cup Soy Sauce.
    2 tablespoons Worcestershire Sauce.
    1 teaspoon Oyster Sauce.
    3 tablespoons table salt.
    3 tablespoons brown sugar.
    3 tablespoons cracked black pepper.
    1 teaspoon onion powder.
    1 teaspoon garlic powder.

    Sometimes I add 1 or 2 teaspoons of liquid smoke.

    Sometimes I add dried crushed basal, dried crushed sage, or dried crushed tyme. I can't decide if I like those herbs added but my kids love it.

    I then place the meat in a big bowl and pour coke over it until covered. I mix it some more to get the coke into the meat. But don't mix to much as it will separate some of the ingredients.

    I cover the bowl and place in the fridge for 12-14 hours.

    After 12-14 hours I take the meat out of the coke and let it sit on a plate to allow the coke to drain of.

    I preheat the oven to to 250 degrees.

    Coat the pans very lightly with oil.

    Squeeze strips of the ground meat onto the pan and let it bake for 1.5 hours.

    Turn strips and let bake for 1.5 hours.

    Turn the oven off and let cool.

    I tilt the pans slightly to allow the fat to run of to the side. This keeps the strips of meat clean once they cool.

    This is currently my favorite jerky recipe.

    Yes it’s cheating but Cabelas Brand Jerky seasoning is very good
    Just add a bit of water mix overnight in a large freezer bag...throw in a dehydrator

    Dr. Pepper Jalapeno jerky. very very good. I use flank steak
    2 cups Dr. Pepper
    3 Jalapanos sliced
    1 tablespoon Worcestershire sauce
    2 tablespoons kosher salt
    2 teaspoons black pepper
    1 teaspoon garlic powder
    1 teaspoon onion powder
    Mix all ingredients in a sauce pan and bring to a boil. Reduce heat and simmer for 10-15 mins or until mixture is reduced by half. Chill the marinade completely. Put sliced meat in a big ziplock bag and add marinade. refrigerate for 8-12 hours. lay out paper towels and pat try jerky before cooking
