I'm really not a fan of 'deep fried' anything so I came up with this one about 20 years ago, it's pretty simple

Open up a can of Italian tomatoes and empty into shallow pan.
    bring to simmer.
    add fillets.
    spoon sauce over fillets.
return to simmer for about 2 minutes.

    eat.

It is a great way to do a quick and easy shore lunch, and is by far my favourite way to cook fish.

Mrs. Slayer likes a slightly different version:

Exactly like above except with Italian Salad dressing (It isn't a Bolognese anymore this way), but still yummy!

and to make it an even easier shore lunch, tear off a 2 foot long strip of HD foil, splash on some dressing in the middle, and add a couple layers of fish, dressing both sides) wrap them up tight and toss them in some coals, or in the fire. flip over a couple times, and in about 5 minutes, they're done.
    BYOF (bring your own fork)

Open fire , fresh fillets, think you can toss anything in the pan and it will taste awesome.
Def going to try this but going to keep the good ol butter and onions in the pan then add the can

I made myself hungry when I wrote this earlier, so I made a different version for dinner tonight using Cod loins, and a Mediterranean garlic and basil grilling sauce. Turned out awesome!
