With bunks you need deep enough water to float the boat off the trailer. Rollers give you a little leeway with that and lets you push the boat off.

So true, the unloading and loading of the boat is one thing I always do myself. I have a routine I follow, never had a mishap and never have to worry about something getting missed or not correctly fastened.

I tell new boat owner that the unloading and reloading is one exercise you want to do yourself and get proficient at. Never take it for granted that the ramp help is actually doing everything required. best to just be rope holders.

With rollers you could launch your boat on your lawn. Carefully of course. Wont be able to to that with bunks.

Rollers seemed to have gotten a bad rap for damaging aluminum hulls. From the weight of the boat only sitting on 4-8 rollers vs equal distribution over bunks.

I've never seen or encountered the damage personally, but can attest to the fact that launching a boat off a roller trailer gives you way more versatility on various launches.
